I make them every holiday season and they are a big hit with my family and friends. If you are not familiar with a gelatin mold, they are really easy to use. A mold typically has three parts...the ring, a bottom seal and a top seal. Once your gelatin salad is firm, you will want to un-mold it onto a serving plate that is lined with fresh lettuce leaves. You will want to keep your dessert in the refrigerator until 15 minutes before serving time. If desired, you can top the dessert with some cool whip and/or fresh fruit. Cranberry Salad 3 cups fresh cranberries 3 cups water 1 1/2 cup granulated sugar 1 teaspoon baking soda 1 package (6 ounce) cherry-flavored gelatin 1 1/2 cup miniature marshmallows 1 cup chopped apple (unpeeled) 3/4 cup chopped celery 1/2 cup chopped walnuts Rinse cranberries in a double colander; remove any stems and faulty berries. Place cranberries, water, sugar and baking soda in a 2 1/2 qt. saucepan. Cook over medium heat stirring frequently for about 5-7 minutes or until mixture is hot and sugar is dissolved. Remove from heat. While mixture is hot, stir in gelatin and miniature marshmallows until dissolved and melted. Cool slightly; stir in apple, celery and walnuts. Pour into a gelatin mold and seal. Refrigerate for 4-6 hours. Cran-Raspberry Nut Salad 1 package raspberry gelatin 1/2 lb. cranberries 1 orange 1 apple 1 cup granulated sugar 1/4 teaspoon salt chopped nuts Prepare gelatin according to package directions. Chop all cranberries, apple, orange and nuts and add to the gelatin mixture. Stir in the sugar and salt until dissolved. Pour into a gelatin mold and seal. Chill for 4 hours in the refrigerator until firm. Cranberry Applesauce Salad 2 cans jellied cranberry sauce 1 can of applesauce 1 (3 ounce) box cherry gelatin 1 cup boiling water Lightly whip cranberry sauce until smooth, stir in applesauce. Add powdered gelatin mix and stir until all 3 ingredients are combined. Stir in 1 cup of boiling water and stir until ingredients are well combined. Pour mixture into a gelatin mold and seal. Refrigerate for 4 hours until firm.
