What makes a good pizza good? Plain and simple, the perfect pizza has lots of cheese, good, spicy tomato sauce, and a light, crisp crust. Just one poor ingredient can ruin the whole pie. But find all three on the same pizza, and you"ve got a winner! Look for pizzas with breay, crisp crusts. You don"t want a crust that tastes like the cardboard box it came in! If you prefer a thick crust pie, find a crustthat is still crisp but also soft and chewy inthe center. Apoor crust is soggy, doughy, or dry. The tomato sauce should be pretty thick and well-seasoned. Some sauces can be too sweet, bland, greasy, or runny-and that can ruin the taste of the whole pie. Last and most important of all the ingredients is the cheese. Only "real" mozzarella-and lots of it-will do. Read the label. If mozzarella isn"t near the top of the ingredients list, don"t buy the pizza. Some companies use cheddar cheese instead of mozzarella, and it"s just not as good. Т  When grocery shopping buy the frozen pizza last and put it in your home freezer as quickly as possible. Brush bottom of pizza to remove any loose particles of cheese before baking. Otherwise the pie may stick to the pan. Line oven bottom with alluminum foil to catch any drips from the pie. If you have a gas oven, be sure you don"t cover the vents with foil. For a crisper crust, bake pizza right on oven rack. For a softer crust, bake on preheated pizza pan or cookie sheet.
